Healthier Sweet and Sour Stir Fry With Tamari Tofu
1 block extra firm tofu, pressed
1-2 tbsp of avocado oil
1 tbsp tamari
1.5 cups of water
1 heaping tbsp corn starch
2 tbsp tamari
1 tbsp coconut sugar
1 tbsp rice vinegar
1 tbsp sriracha
1 tbsp tomato paste
Broccoli florets, 1 head
Peppers, red and yellow
1-2 Scallion, chopped
1 + cup pineapple and/or mango (fresh or frozen)
(Makes 2 servings)
Start by pressing the tofu. I usually wrap it in a clean kitchen towel, place it between 2 cutting boards and put a heavy object on top. Let it sit for about 30 minutes to an hour.
Cut tofu in pieces and pan fry on medium heat with some oil until crispy on all sides. Add a splash of tamari to season and glaze the tofu, stir around for another minute, then set aside.
Add washed broccoli florets and cut peppers to a wok or pan with a splash of water, cover with a lid and sauté/ steam for a few minutes.
Mix all ingredients for the sauce, add sauce to the veggie mix and bring to a boil.
Add fruit and chopped scallion and let simmer together for a couple more minutes.
Serve with rice and tofu and enjoy!
