This black pepper sauce is still a favorite and the extra hint of ginger still makes my stomach the happiest. While I used tempeh in this dish, feel free to sub for some baked tofu instead. 👏

Ginger Black Pepper Tempeh
1/2 small onion, diced
5 button mushrooms, sliced
1 block tempeh, cubed
1 inch ginger, minced
4 cloves garlic, minced
4 tbsp light soy sauce
1/3 cup water
1 1/2 tsp freshly ground black pepper
1 green or red bell pepper, diced
2 tsp maple syrup
1/2 tsp cornstarch
Extra veggies of choice: I chose a handful of snow peas

In a sauté pan, add in onions and mushrooms and sauté until onions are softened. Add in tempeh, garlic and ginger and sauté until garlic is fragrant. Add in bell pepper and stir to combine and cook for 2 minutes. Add soy sauce, water and pepper. Stir well and then sprinkle cornstarch evenly over tempeh. Add in maple syrup and any additional veggies you choose and stir well again to combine. Bring mixture to a low simmer and cover for about 5 minutes. Remove from heat and allow sauce to thicken and fully coat tempeh. 🔥🌶
